Pil Pil prawns are a Spanish tapas favourite. A simple easy, and tasty starter or main course, that is perfect for sharing, but even more delicious when kept to yourself!
Ingredients
- 180 grams fresh large prawns
- Fresh parsley, finely chopped
- One small dried chilli finely chopped, or 1 teaspoon chilli flakes
- One teaspoon paprika
- A pinch of cayenne pepper
- Two small cloves fresh garlic, finely sliced
- Olive oil
- Salt to taste
Instructions
- De-vein the prawns if necessary.
- Heat enough olive oil to cover the base of a frying pan and gently fry the garlic and chilli.
- Add the cayenne and paprika.
- Add the prawns, frying until only just cooked.
- Season with salt to taste and serve immediately, topping with fresh parsley
Notes
One of my favourite light-lunches, perfect served with crusty bread, or flatbreads, to soak up all the delicious flavoured oil, or a simple side salad for those more health conscious. Experiment with fresh or dried herbs - oregano, coriander, dill, and fresh chilli work great with the prawns. These are also great on bruschetta, spooned over cool ricotta.
